A New Orleans baker, named Beulah Ledner, experienced a French/Austrian torte on vacation, and decided to modify it for her Louisiana patrons. She created a lemon filling that could withstand the Southern heat. Since the 1950's, the Doberge Torte has been a birthday staple for kid's birthday parties.
My Experience
I knew that this one was going to be a doozy! The recipe says that it takes a whole day to make it! This is one time where I really wished that I had more of the same size cake pan, so that I didn't have to wash them in between. This cake has 8 layers! I also had to be careful not to overbake them since they were so thin. Once it was all assembled and I cut into it, the end result was pretty satisfying. i do think that next time I would do fewer, but thicker layers and use about half of the custard.
