Southern Italian Cream Cake

This cake was inspired by Italian Cream Cake, but many changes were made to make it using southern ingredients. It includes coconut, pecans, and a cream cheese frosting. Eugenia Moore, from Nashville, made this cake to end her Italian dinner parties.


My Experience:

This one had a pretty typical layer cake process. It is a bit more pricey due to the coconut and pecans. You do need to whip up the egg whites to make it light and fluffy. I thought it was a bit odd that the recipe wanted me to mix the pecans into the frosting; I do not think that I have done that before. This cake was light and moist.
