French King Cake

In New Orleans, on Epiphany, it is a tradition to have a King Cake with yellow, green, and purple sprinkles. Most bakeries make a brioche style, but many home bakers in the area bake this version using frozen puff pastry. It is quicker and easier.


My Experience

The steps were super easy as long as you can find the frozen puff pastry and you own a food processor. This cake has an almond filling with a bit of rum and vanilla mixed in. Mine got a bit more puffy than the one in the book, but it still had a nice texture and flavor.
