Cranberry and Cornmeal Ricotta Cake

This is a rustic cake inspired by Zoe Nathan of the Rustic Canyon restaurants in Santa Monica, California, This cake has the Mediterranean additions of ricotta, citrus and olive oil. It is also an homage to early New England baking with ingredients such as cornmeal, maple syrup, and cranberries.

My Experience:

I enjoyed making this cake. Cream the butter, add the sugar and then the eggs. All of the normal steps. The new thing that I had never done before is use ricotta as the wet ingredient when taking turns mixing in the dry ingredients and the wet. It all went well, and I like the way that the cake looked with the sugared cranberries on top.
